[Local’s Recommendation] Making The Signature Dish of Fuli, the Hervidero Organic Tofu in Luoshan

Why come a long way to Luoshan Village, Hualien to make tofu? Because the brine is local, such an advantage is rarely found in Taiwan; Luoshan Village is the first organic village across the island, and the soy beans for tofu are all organic. Visitors can relish the tofu and learn the process of making tofu in person; therefore, it is the best food and agriculture experience. The last reason is the most important, the texture of the tofu here is firm and tastes super yum!

There are two kinds of coagulants to make tofu, one is brine and the other is calcium sulphate, commonly known as plaster. The natural brine used in Luoshan, neither the side product of drying sea salt nor the brine bought from stores, is from the hervideros in the village. The water from hervideros tastes salty and the farmers in early times used it to make tofu which now becomes a signature dish of Fuli.

Starting from milling the soybean milk, Big Nature Farm House offers a millstone to teach visitors to mill the beans. Cooking the soybean milk before adding the brine and molding. These steps seem simple but require wisdom and skills to accomplish. We were excited when separating the tofu from the molds. Tofu in Luoshan is tasty, and the tofu made by ourselves is even more tasty!
